Apricot Almond Bars

 

18 graham crackers                                                           1 C flaked coconut

¾ C firmly packed brown sugar                            ½ C chopped dried Apricots

½ C butter                                                                    1 ½ C powdered sugar

½ C undiluted  Carnation evaporated milk                  2 T soft butter

1 C graham cracker crumbs                                          2 T undiluted Carnation evaporated milk

1 C sliced almonds                                                            ½ t. almond extract

 

Place 9 graham crackers in bottom of a buttered 8 inch square dish.  Heat brown sugar, ½ C butter and ½ C evaporated milk until mixture comes to a full boil.  Remove from heat, stir in graham cracker crumbs, ¾ C of almonds, coconut and apricots immediately.  Spread apricot mixture over graham crackers in dish.  Top with remaining 9 graham crackers.  Blend powdered sugar and soft butter together.  Add 2 T evaporated milk and almond extract; beat until smooth.  Spread over top of graham crackers; sprinkle with remaining almonds.  Chill.  Cut into bars.
