COOL SUMMER AMBROSIA          (Serves 4)

1 pkg orange gelatin

1 cup boiling water

1 small can drained orange sections or 3 oranges sectioned

1 cup miniature marshmallows

½ cup shredded coconut

3 egg whites, beaten stiff

 

Dissolve gelatin in boiling water.  Cool until it starts to thicken.  Add rest of ingredients (except egg whites).  Stir until frosty color, fold in beaten egg whites gently and pour into mold.

 

 

 

REMOVING GELATIN SALADS FROM MOLDS

 

1.                 Have serving dish ready

2.                 Have pan large enough to set mold into to dip

3.                 Fill pan with hot water

4.                 Dip mold right to top for 5 seconds – lift and shake to loosen; invert and dump, still shaking

5.                 Garnish with parsley
