This cheesecake is large and is very
inexpensive to make compared to the prices in stores:
Cherry Cheesecake
Crust: Mix together 2 cups crushed graham
crackers, 1/2 cup sugar, 1 stick melted butter. Reserve a handful of
mixture to put on top of cake when done.
Pat the graham cracker mixture onto a 9x13 pan.
Filling: 3 Philadelphia cream cheese (8 oz.
each), 1/2 cup sugar, 3 large eggs.
Using mixer, blend together until smooth. Then
gently spoon onto crust and bake until dry to the touch (30-35 minutes in
a 325 degree oven).
After cheesecake completely cools, spoon 1 can of
Thank-you brand filling on top (can be strawberry, cherry, etc.). Then,
spoon 1 large (12 oz.) Cool Whip on top. Sprinkle remaining graham
cracker mixture to decorate the top. Refrigerate - make day before you
need it.
