INCREDIBLY DELICIOUS CHICKEN SALAD

 

2 c. chicken, cooked and cubed             3/4 red or green grapes (seedless), quartered

1/4 c onion, finely chopped                    1/4 c. shredded carrot

1/2 c. crushed pineapple, drained         1/4 c. celery, diced

1/2 c. apple, not peeled and finely         3/4 c. mayonnaise

      chopped                                             1/2 c. chopped nuts

 

     When cooking chicken for chicken salad, put in a small onion, 1 rib of celery, some parsley, 1 or 2 carrots and salt.  When chicken is tender, lift out chicken and let cool.  Strain broth and you have excellent chicken soup.

 

     Mix all chicken salad ingredients.  If salad appears dry, add more mayonnaise or some of the drained pineapple juice.
