PEA SALAD

 

1/2 cup sour cream

2 sliced scallions

1/2 tsp salt

 

Mix the above ingredients.

Stir in 2 cups drained, thawed frozen petite green peas

Serve on a lettuce leaf; sprinkle with cut red radishes. If you cut the radishes in slices first, then cut across into slivers, they look like little red-tipped “straws.”

 

Serves 4.
