QUICK PEPPERONI SNACKS

 

 

6 dozen pepperoni slices

2/3 cup mushrooms, chopped

10 oz. frozen, chopped spinach, thawed and drained

2 Tbsp. minced onion

2 eggs, beaten

1 cup ricotta cheese

½ tsp. oregano

¾ cup Parmesan cheese

Salt and pepper to taste

 

Grease mini muffin pans.  Place a slice of pepperoni in the bottom of each muffin cup.  Mix all remaining ingredients.  Spoon the mixture into the muffin pans.  Bake at 375 degrees for 25 minutes or until puffed and set.  Turn out snacks so the pepperoni slices are on top.  Serve hot or warm.
