ROASTED RED PEPPER BAQUETTE

 

 

1 loaf French bread

2 Tbsp. Balsamic vinegar

2 jars (7 oz. each) roasted red peppers – drained & sliced

1 Tbsp chopped parsley

1/3 cup pitted olives

½ tsp. pepper

¼ cup olive oil

¼ tsp salt

¼ cup minced shallots

4 oz. goat cheese – crumbled

 

Preheat broiler, slice bread in half lengthwise and place cut side up on a broiler pan. 

 

Combine red peppers, olive oil, shallots, vinegar, parsley, and salt in a medium bowl stirring to mix well.  Spoon evenly over cut sides of bread halves then top with the goat cheese.

 

Broil 3 inches from heat source about 5 minutes or until cheese begins to soften and edges of bread are lightly browned.  Cut into 1 inch slices and serve.
