Stuffed Fresh Mushrooms

 

12-16 medium to large size mushrooms

 1/2 cup margarine

  3 Tbsp.green pepper ,finely chopped

  1 1/2 cups fresh bread crumbs

  1/2 tsp.salt

  1/8 tsp pepper.

  dash of cayenne (optional

 3Tbsp.finely chopped Vidalia onion

 

Wipe clean mushrooms with damp cloth . Remove stems; chop stems finely ;set aside.

Heat 3 Tbsp. mrgarine in large skittlet.

Saute mushrooms caps, on bottom side only. 2 to to 3 minutes;remove. Arrange rounded side down in shallow baking dish.Heat rest of margarinein same skillet.

Saute chopped stems ,green pepper and onion untill tender , about 5 minutes. Remove from heat . Stir in bread crumbs and seasonings . Add a teaspoon of mayonaise. Use to fill mushrooms caps, Mounding mixture high in the center.

Bake 15-20 mins. Serve Hot...
