TOMATO PASTA TOSS

 

8 oz uncooked pasta

2 Tbsp. cider vinegar

2 ½ cup diced fresh tomatoes

2 cloves minced garlic

1 Tbsp dried basil

¼ tsp. salt

½ cup olive oil

1/8 tsp pepper

3 Tbsp grated Parmesan cheese

 

Cook pasta according to package directions.  Meanwhile combine tomatoes and basil in a serving bowl – set aside.  In a small bowl combine oil, vinegar, garlic, salt and pepper.  Drain pasta; add to tomato mixture.  Drizzle with oil mixture and toss.  Sprinkle with Parmesan cheese.  Serve immediately – or serve cold.
